I’ve had this carton of College Inn Thai Coconut Curry Broth in my cabinet for quite some time. I always have chicken or beef stock around but bought this ‘culinary broth’ on an impulse in part because it had this delicious recipe on the back.
Last night, I felt like cooking something different and decided this broth had spent enough time hanging out. (I’ve been trying to get back to creating in general after a few very long, busy months!) It was so delicious. I did add the chicken for a ‘heartier soup’ as suggested at the bottom of the recipe but it doesn’t need it. I WISH I had taken a picture because it cooked up so well and looked quite lovely in the bowl and they don’t even have a picture on the College Inn website to share.
